<p>Förlagan till det här baket kallas för <a href="http://www.heavenlycupcake.se/2010/03/peanut-butter-fudge-brownies.html">brownie</a> med jordnötsfrosting. Den största förändringen vi gjorde var att göra den rund så man kan kalla den kladdkaka. Sedan 2008 så har man firat kladdkakans dag den <a href="http://sv.wikipedia.org/wiki/Temadag#7_november">sjunde november</a>.</p>
<p>Smält smöret och blanda ihop ingredienserna. Häll smeten i en form. Grädda i 175 grader ca 20 minuter.</p>
<p>200g smör<br />
200g mörk choklad<br />
3ägg<br />
3dl socker<br />
1tsk vaniljsocker<br />
2dl vetemjöl</p>
<p>Även frostingen börjar med smör. Låt det nå rumstemperatur. Vispa det sedan mjukt med elvisp. Lägg florsockret åt sidan och blanda ner övriga ingredienser. Tillsätt sedan florsocker försiktigt tills kladdet har bra konsistens. Bre frostingen på kakan. Ställ i kylen tills det är dags att servera.</p>
<p>75g smör<br />
1dl jordnötssmör, smooth<br />
1-2msk mjölk<br />
1tsk vaniljsocker<br />
ca 250g florsocker (ett halvt paket)</p>

<p>Det här receptet är kraftigt inspirerat av ett recept på <a href="http://www.matklubben.se/matklubben/helenepe/kokbok/?id=340021&amp;recipeid=62105&amp;offset=3">kladdmuffins med dumlefluff</a>. Då vi bakade inför kladdkakans dag kunde vi ju inte gärna göra muffins.</p>
<p>Gör botten som <a href="http://fotodieten.wordpress.com/2011/11/07/klassisk-kladdkaka/">klassisk kladdkaka</a> fast i små formar. Dumlegrädde görs genom att förts smälta dumlekola i grädde, låta svalna och sedan vispa den smaksatta grädden.</p>

2 ägg<br />
2 dl socker<br />
4 msk kakao<br />
1 tsk vaniljsocker (valfritt)<br />
1 dl mjöl<br />
100 gr smör<br />
2½ dl grädde<br />
1 påse dumlekola (ca 15 st)</p>

<p>Ställ wok-pannan på spisen. Fräs bladspenat i smör. Vi hämtar vår bladspenat från frysen så den får s.a.s. tina i pannan. Hacka rejält med vitlök och riv massor med ingefära. Blanda ner kryddorna i röran och smaka av med salt och peppar. Häll på krossade tomater och låt puttra upp.</p>
<p>Häll upp i portionsskålar och smula över rikliga mängder fetaost. Avocado eller ägg gör sig väldigt bra till.</p>

<p>
För att göra crème brûlée behöver man några saker utöver det vanliga; ugnsfasta små formar, en brännare och framförhållning.</p>
<p>Inköpslista:<br />
3 dl vispgrädde<br />
1 dl  mjölk<br />
3/4 dl strösocker<br />
4 stora äggulor<br />
1/2 msk vaniljsocker<br />
ca 2 msk strösocker</p>
<p>Dagen innan. Börja med att sätta ugnen på 150°. Blanda grädde, mjölk och socker i en kastrull. Koka upp gräddmjölken. Ta en bunke och vispa upp äggulorna.<br />
Nu kommer det kritiska momentet. Häll först lite av gräddmjölken över äggen under kraftig vispning. Häller man  gräddmjölk för snabbt kan det skära sig. Fortsätt hälla på mer tills all gräddmjölk har blandats med äggen. Tillsätt vaniljsocker. Fördela smeten i 4 portionsformar som rymmer 1 1/2 dl vardera. Grädda i vattenbad i nedre delen av ugnen ca 60 min. Smeten är lite lös i mitten men stelnar när den kallnat. Låt formarna stå i kylen över natten.</p>
<p>Strax innan servering. Strö socker på bruléeformarna och bränn tills sockret smälter. Hur hårt man bränner påverkar vilken färg skorpan får.</p>

<p>Väldigt mumsiga hallonbiskvier. Dock kan jag förvarna att jag fick ca 45 bottnar, men smörkrämen räckte bara till 12 biskvier. Så antingen gjorde jag nåt tokigt när jag gjorde bottnarna, eller så kan man minska bottendelen på receptet. Alternativt öka smörkrämsdelen om man vill ha många kakor.</p>
<p>Ingredienser</p>
<p>Bottnarna<br />
4 äggvitor<br />
3 dl socker<br />
½ kg riven mandelmassa</p>
<p>Smörkräm (samma som användes till <a href="http://pyntopyssel.wordpress.com/2011/02/06/hallonmacarons/">macarons</a>, dock utan karamellfärg)<br />
100 g smör, rumsvarmt<br />
1 ½ dl florsocker<br />
1 tsk vaniljsocker<br />
1 äggula<br />
2 msk mosade hallon</p>
<p>200 gr mörk blockchoklad</p>
<p>Vispa lätt äggvitor och socker, blanda in mandelmassa och päronessens. Gör små klickar på bakplåtspapper. Grädda 7-8 minuter i 225 grader. Låt svalna.</p>
<p>Lägg smöret i en bunke och blanda med florsocker och vaniljsocker. Vispa med elvisp tills blandningen är ljus och porös. Vispa ner äggulan och hallonmoset.</p>
<p>Bred smörkrämen på bottnarna. Ställ i frysen. Smält 200 gr mörk choklad. Doppa bisvierna. Ställ kallt/i frysen igen.</p>
